Baking brings me immense joy, and lately, I’ve been spending a lot of time perfecting my banana bread recipe. Today, I’m excited to share this simple and delightful recipe that I recently discovered, with my own unique twist. I thought it would be great to document it here so that it remains easily accessible and, let’s admit it, so I never forget it! lol

Prepare yourself with these ingredients:
• 2 cups all purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/2cup sugar
• 2 eggs
• 4 ripe bananas
• 1 teaspoon vanilla
• 1/2 cup vegetable oil
• 1 teaspoon cinnamon or nuts (optional)
Directions:
1.Preheat oven to 180 degrees Celsius and prepare your baking tin
2.Mash the bananas (you can use a fork to maintain the small lumps that add to the texture)
3.Beat the eggs and sugar until fluffy then add the oil and vanilla essence and mix. Fold in the mashed bananas till well combined.
5.Mix the flour, baking powder and baking soda separately then add to the wet ingredients. Fold in until well combined.
7.Pour the batter into your baking tin and bake for 45-60 minutes until golden brown and cooked through.
